Chicken Wings

Our Southern Odyssey’s Chicken Wings are very simple to make with only four ingredients and very little prep time.   They are great to make during the week.  Instead of deep-frying the chicken wings we place them in a 400 degree Fahrenheit oven and bake them.  We do not bread our chicken wings or create a dry rub for them.  Because the skin on its own becomes crispy and delicious.  It does take some time for these chicken wings to cook, 40 minutes on each sides, but it is well worth the wait.

Our Chicken Wings recipe is made without a sauce.  The reason for this is that one day I (Valancie) wanted some chicken wings which I had in the fridge; however, I did not have the ingredients to make the sauce.  But I really wanted chicken wings so I just made the chicken wings without the sauce.  To my surprise everyone loved them, including myself.  I had always thought that I had to have a sauce for the chicken wings but now I know better.  So on those afternoons when I am tired but I need to make dinner.  I will make baked chicken wings without the sauce.  That way I just put the wings in the oven and go and sit down on the sofa while they bake.

The flavor of the chicken wings are delicious.  The olive oil that is brushed on the chicken wings makes the skin crispy in the oven.  The meat of the chicken wings becomes tender and just falls off the bone.  The only other ingredients that makes this recipe so flavorful is the pink salt and the freshly ground black pepper.  Every time I make these I think that there will be leftovers, but there is never any.  “So sad!”  This is one of those recipes that is delicious in its simplicity.  It just goes to show that you do not need a massive amount of ingredients to make a recipe truly tasty.  

Kitchen Safety Tips:

Some basic precautions when handling raw chicken.  Remember to keep raw chicken away from vegetables especially vegetables that will not be cooked.  Also, keep cutting boards, knives or any other kitchen tool used to touch the raw chicken, or any other meat, away from other foods until they are properly and thoroughly cleaned.  Make sure the work station is cleaned before starting to prepare the chicken as well as afterwards. Always make sure to wash your hands before and after handling raw chicken.  And never use a knife or basting brush that was used to prepare the raw chicken, to cut or brush the fully cooked chicken.  Unless the knife or brush has been thoroughly washed after preparing the raw chicken.  Having excellent kitchen hygiene is key to a healthy meal.    

Instructions:

Start by making sure to use either fresh or fully thawed chicken wings.  It will take approximately 35 chicken wings.  Preheat the oven to 400 degrees Fahrenheit.  Take the baking pan and line it with parchment paper.  We use a 16” x 12” baking pan to cook our chicken wings.  Here is a tip, we usually take and line the baking dish with two layers of parchment paper.  This helps to keep the pan cleaner.  Tip number two, take the olive oil and pour a half of a cup into a small bowl that the basting brush can fit into.  Next take and using just a small amount of olive oil brush the top of the parchment paper.  This helps keep the chicken wings from sticking to the paper as they cook.  Lay the chicken wings in a single layer on the parchment paper which is on the baking pan.  After all the chicken wings are on the baking dish take and brush the chicken wings with olive oil, making sure that they are evenly coated.  Place the bowl with the leftover olive oil and the brush to the side.  We will need it again when we flip the chicken wings.  Now sprinkle the chicken wings with pink salt and freshly ground black pepper.  That is all the prep work needed.  The oven should be up to temperature.  Place the baking pan in the oven and cook the wings for forty (40) minutes.  After the forty (40) minutes remove the chicken wings from the oven, leaving the oven on.  Take and place the baking pan on a solid surface.  If placing the baking pan on the counter top make sure to have a potholder between the pan and the counter.  With the tongs take and flip each wing so that the side that was on top is now on the bottom.  Note, if the wings were previously frozen there might be excess water in the baking pan.  If so, take a spoon and gently dip out the excess water and grease in the pan into a bowl.  If the wings were fresh there should not be excess liquid in the baking pan.  To be clear, if the excess liquid fills the pan then you have to be careful moving the baking dish from the oven to the counter.   If there is too much liquid some will need to be removed.  A little liquid is fine, a massive amount is not.  After the wings have all been turned over, brush them again with olive oil and sprinkle with pink salt and freshly ground black pepper.  Place the chicken wings back into the oven for another forty (40) minutes.  If the baking pan was placed on a potholder make sure that the potholder is still on the counter and not under the baking pan.  After the forty (40) minutes the chicken wings will be ready to eat.  We hope you enjoy this recipe as much as we do.
